Pumpkin Chocolate Chip Protein Muffin Recipe


Newsflash…

I am not the best cook.

Seriously.

But sometimes, I get a wild hair and I make something…

and

it ROCKS!

In this case, I had an itch for chocolate

and these puppies  just made themselves!

Since I am trying out this whole Anti-Inflammatory food thing

I added walnuts and chia seeds-

to make them even MORE healthy.

Which makes me feel better about eating them.

Justification at its finest folks!

You wana try it?

OF COURSE YOU DO!

Here is the recipe..
5 tbsp ground chia seeds
1 cup whole wheat flour
2 scoops protein powder (I used MRM Vanilla Protein Powder)
1/4 cup coconut oil (or olive oil if you wish)
1/2 cup maple syrup (I used sugar free maple syrup)
2 tsp baking soda
1 (16 oz) can of pumpkin
1 tbsp vanilla
1/2 tbsp salt
2 tbsp cinnamon
2 eggs (I used eggbeaters)
1/2 cup walnuts (use less or more depending on your preference)
1/2 cup dark chocolate chips (use less or more depending on your preference)

Preheat the oven to 350 degrees

Mix all of the wet ingredients into the dry ingredients

Then stir in the walnuts and chocolate chips

I put mine in mini-muffin tins for a mini-treat…

but you can put them in regular tins for normal sized muffins.

These are great in the morning for a quick on-the-go breakfast

and have a good mix of protein, carbs, healthy fats and fruit!

I bet you could even make them into pancakes…

Seriously though!
