Foodie Friday: Cauliflower Lentil Yellow Curry


It’s that time again!!

I freaking love Fridays!

And today, I am excited to share with you my recipe for Cauliflower Lentil Yellow Curry.

I have been eating it all week and it is fantastic!!

As you have probably noticed, the majority of the recipes that I share with you are SUPER easy and don’t require much time.


I am lazy and hate spending a bunch of time cooking dinner.

So, for those of you out there who need quick meals, you are welcome!


Ingredients needed:

1-2 bags of Riced Cauliflower (I picked mine up at Trader Joes)

1 bag of Frozen Pineapple

1 bag of Stir Fry veggies

1 TBSP Minced Garlic (or more if you LOVE garlic)

1-2 TBSP Ground Ginger

1-3 TBSP Red Curry Paste (to taste)

1/2 TBSP Tumeric

1/2 TBSP Curry Powder

3 cups vegetable broth and 3 cups water

2 cups dry lentils

Salt to taste



Sautee the garlic and ginger in a little oil for about 3 minutes and then add the curry paste, tumeric, and curry powder. Cook for 2 more minutes.

Then add the broth + water and bring to a boil.

Add lentils and let simmer for 30 minutes (add more water if necessary).

Add thawed out frozen pineapple and stir fry vegetables.

Simmer for 10 more minutes.


Microwave the riced cauliflower for 3 minutes until hot and scoop into a bowl.

Top with stir fry mixture.
