Well, I think oatmeal is fascinating! It’s a blank canvas and that’s what make it so wonderful. So, I decide to add a few little twists to this simple breakfast food, but as my usual goes…nothing fancy, just good.
Quinoa Oatmeal with Berries and Chia Seed
– 1 Cup Steel Cut Oats
– 1/2 Cup Quinoa: rinsed
– 3 tb. Chia Seed
– 3 1/2 to 4 Cups Water
– Any (or all?) of these toppings: Fresh Berries/ Sliced Almonds/ Pecans/ Walnuts/ Honey/ Brown Sugar/ Maple Syrup/ Pomegranate Seeds/ Apples/ Dried Cranberries/ Cinnamon/ Raisins/ Bananas/ Milk/ Almond Milk/ Coconut Milk/ Cream…SEE??!! This is what makes oatmeal great.
– In a large saucepan, combine oats, quinoa and water. Bring to a boil, then reduce and let simmer for about 15 minutes.
– Remove from heat and add Chia Seeds.
– Add Toppings.
Enjoy!

OC Half Marathon Commitment Countdown Update:
Hello everyone!
RatherBeRunnin’ here with a quick update for you.
Today is currently T-Minus 37 days.
I am writing you from the SF Airport, as I’m on my way to Arizona for Spring Training.
Up to this point, I have done fairly well.
Not perfect.
Noooooo definitely not perfect.
There have been a few mini Reeses cups, and a few too many beers after Modesto.
Overall though, I have been tracking all of my calories- which is a good thing.
But, I still have room to do better.
And I will!
The does look yummy. I’ve bought Quinoa, but a have been afraid to actually do anything with it so I’ve been then throwing it away. What a waste of food for me! Dare I try?

I am getting a bit tired of overnight oats and I have a bunch of quinoa to use, so I’ll definitely be trying this recipe. Thanks for sharing!

I make a lot of overnight oats… I may have to add some quinoa and see how they do with slow absorption of water instead of heat… or maybe I should google/Pinterest that first and see if anyone else has tried it yet! 😉 Enjoy training!
