Foodie Friday: The Lazy Runner Edition


Hello and happy day to you!

Today’s edition of “Foodie Friday” is going to be a little bit different.

Don’t freak out.

Instead of sharing a recipe that I like, I have a few quick and easy meal suggestions for you.

This post was inspired by a conversation I had with one of my best friends a few weeks ago.

She was complaining commenting on how she never has time to cook dinner because she is so busy working,

taking care of her family,

cleaning the house,

and of course,

working out.

And I, being the absolute laziest meal-prepper on the planet…

gave her a few suggestions that I use to make my meal prep Monday as short and sweet as possible.

I thought it would be a great idea to share those tips with you…

So here we goooooo!

Tip #1: Buy it frozen.

I am not talking about frozen dinners, here. Most, if not all, grocery stores sell bags of frozen vegetables. These not only last longer, but still have the majority of the nutritional value that raw veggies do and cook MUCH faster.

Tip #2: Buy it pre-cooked.

If you are short on time, places like Trader Joe’s sell pre-cooked meats that are already cut up and are easy to mix in to a salad or grain bowl. They are a little more expensive than purchasing the meat uncooked and/or frozen, but it’s worth it.

Tip #3: Cook your food in BIG batches.

I like to make a HUGE pot of quinoa or rice and use it for the entire week. It not only saves time, but makes throwing together a meal at the last minute much easier.

These four bags are super cheap and have 2-3 servings in each bag.

I combine them with a protein, MORE veggies (because you can never have enough veggies in my opinion) and top with feta cheese, slivered almonds or sliced avocado.

The entire meal should take less than 15 minutes to make!

How easy is that?!?!?

    This is great, given me plenty of ideas! My favourite meals can pretty much all be cooked in a single pan (usually a wok). Literally just some form of protein (quorn or egg, usually), frozen veggies, fresh kale and then one of those microwave rice packets. And obviously a shitload of seasoning- I switch between asian seasoning (five spice etc), mexican (taco spices lol) and a generic mixed herb with some tomato paste. it’s the easiest meal template, and can be so easily adapted!
