Foodie Friday: The Lazy Runner Edition


Hello and happy day to you!

Today’s edition of “Foodie Friday” is going to be a little bit different.

Don’t freak out.

Instead of sharing a recipe that I like, I have a few quick and easy meal suggestions for you.

This post was inspired by a conversation I had with one of my best friends a few weeks ago.

She was complaining commenting on how she never has time to cook dinner because she is so busy working,

taking care of her family,

cleaning the house,

and of course,

working out.

And I, being the absolute laziest meal-prepper on the planet…

gave her a few suggestions that I use to make my meal prep Monday as short and sweet as possible.

Hello and Happy day to you!

As many of you know, I just (praise the Lord!) recovered from a minor hamstring injury that forced me to pull out of Rock n’ Roll San Diego.

Boo!

But! I am back running and haven’t had any problems with my hamstring since.

WOO WHOO!

I do, however, feel as though I have lost some fitness.

Or maybe it is in my head?

Who knows.

Things That (As A Runner) I Can’t Stand!

As a runner, there are certain things that really piss me off!

I am sure most people don’t understand, but maybe you (being a fellow runner) will agree with me…

1. When some moron sprints ahead and then stops in front of me in the middle of a race.

I ran the City to the Sea Half Marathon over the weekend, and I must say, it was glorious.

 I took home another shiny new PR!

(A special thanks to PaceBands for providing me with the 2:12:30 band I used during this race… it was SO HELPFUL.)

No, this is not an overall PR, but considering I started the year running a 2:19 Half Marathon…

I am grateful to be where I am now.

The race just so happened to fall on my birthday, so it was an awesome present to give myself.

Last night’s amazing dinner, KT tape & other randomness!


So a friend at work gave me crap a little bit ago for all of my “running” related posts on Facebook, so I thought I would show him up by posting some randomness and throw a wrench in the game (here catch!).

My “Thursday friend” (JulieCat) is an amazing cook (and friend might I add… and not just on Thursdays either) and her dinner last night was absolutely delicious! I wanted to share so you can drool be inspired to make this dish yourself. Here is a picture of the salmon salad that she put together:

I run in America’s Happiest City!


For those of us who are fortunate enough to live in San Luis Obispo, this is definitely not news, but according to USA Today: San Luis Obispo, CA is America’s Happiest City! It is also home to one of the greatest Marathons ever, the SLO Marathon! I am running in this Half Marathon in 11 days and am so excited. Continue reading
